What critters are good to be made into jerky? Tips? Seasonings?

Deer, Duck and goose are my most used jerkey meats... It's the only way I will eat any amount of duck....

On moose and bear, I cut the "calf" muscle(right above the foot) into this strips and dry it with salt, maybe a little brown sugar. Makes a good trap line snack

I use hamburger made from moose deer bear, I like the jerky shooter works well i like the ol' bobs jerky cure and seasoning 1 pack will do 10lbs of meat ,my favorit is hot & spicy,there is a few diffrent kinds to choose from. I bought the shooter and seasoning through cabela's.

would think beaver would be to fatty..Yea kinda want lean meat for jerky.Always keep learning.Goose is great,Crain,duck.Grind,mix,put into strips,it all works

We mainly use ground meat for ours. We make 100's of pounds a year from deer. Alot o our beaver gets ground for jerky, its not too fat. Cut all fat/white off any meat before you grind it. American harvester seasoning and cure. 2 lbs burger, 1 pit of cure and 1 seasoning. 1/2 cup of garlic powder, 1/4 cup warm water, mix well, let sit at least 6 hrs and overnight covered in the fridge is best. Ive got tons of other jerky and meat recipes. I make alot of sticks too as opposed to strip jerky. Red pepper at 1 teaspoon to lb o meat zips it up if need be.

Looks great.We just wasn't raised much on rodent.I guide for bears and lots from down south eat different things.We kill lots of bear,they take home.I like fall bears better,cleaner diet,smell niser,good fur.

We were raised to try just about anything once. I get requests all the time for jerky, sticks and summer sausage now we get requests for waver meat. It tastes better then the leanest best cut of beef. Chicken fried beaver sandwiches are always a hit at our wild game cookouts. I see alot of jerky recipes with worchestershire sauce. Be careful with it as it can scorch easy.
