Take one stick of butter. Melt butter in a sauce pan to that add 1 chopped onion,2 chopped jalapenos(optional) 1/2 cup brown sugar,1 can tomato sauce,1/2 tsp garlic salt,1/4 cup Worcester sauce, 1/2 tsp liquid smoke,and 1 cup of your favorite barbecue sauce. Let this simmer for 5 minutes stirring occasionally. Bone out one average sized beaver and cut into 1 inch pieces. Cover beaver meat with sauce and place in 325 degree oven and cook for 1 hour.

Yes it is one of the best if not the best. It is a recent addition to my families table but it is very good.

One thing on Beaver,I love it but EAT NO more than 1 steak,I loved the taste so much I went back for seconds and in about an hour my kidneys were producing a high urine toxin,,(burned when you pee,,lol,lol but it didn't last long,but Beaver is the highest protein meat you can eat!! Very very good!!Great post!!! Dang makes me want some now!! Larry Gene

My family eats beaver meat often.. Crock pot beaver with taters and carrots!! MMMmmmm

Good eatin! I fry it all up along with my bobcat backstraps.........AND BOBCAT TASTE GREAT, BETTER THAN THE BEAVER..........to me anyway. But i was born in louisiana soooo that might have something to do with it. LOL

Beaver is Delicious! I like mine in a brown gravy with raccoon. Lots of onions and garlic. I use Italian dressing to start browning it. Adds a very good flavor.
