3 large bell peppers one red one green one yellow or all green !! 1 small onion 1 fresh green chile (new Mexican Anaheim or poblano) 1 fresh jalapeño 3 garlic cloves 1 tablespoon of oil 1 tablespoon of garlic flavored oil 1 tablespoon of fresh minced cilantro 1/2 teaspoon of ground cumin dash of red wine vinegar
prep your smoker . 200 to 220 temp. rub the veggies with the unflavored oil
transfer them to the coldest spot on your smoker away from the heat. smoke the garlic cloves for 25 to 30 minutes until soft.everything else should take from 65 to 75 minutes. place the cooked peppers in a plastic bag to help steam the skin off.chop the garlic and onion finely and put into a bowl.take the peppers out of the bag and remove the skins .
slice the bell pepper and green Chile in to thin ribbons and add to bowl . mince the jalapeño and add half into bowl . add the rest of the ingredients reserving the jalapeño half for after the taste test . stir and taste . add salt or more jalapeño as needed . serve this hot or cold .
