1 plump marsh rabbit "Muskrat" 2 Tablespoons salt 2 qt. water 1/2 cup flour 1/2 teaspoon pepper 6 strips fatty bacon "chopped" 1 can 10 oz onion soup 1 cup sour cream "Warmed" Soak whole muskrat in saltwater overnight. Drain. Cut into serving size pieces. Mix flour salt and pepper together and roll meat in mixture.in a deep heavy skilletor dutch oven fry the bacon till transparent or lightly brown.Add meat and brown on all sides. add soup and sour cream and stir. Lower heatcover tightly and simmer for 1 hour or untill meat is tender but not falling off the bone. Enjoy Note.. Recipe is suitable for rabbit omitting the overnight soaking step.
