I was lucky enough to put up a few muskrats towards the end of the season and seem to have one that always has grease on it, is stiff, and is more of a yellowish color than the others (probably over fleshing with the color on my part). It is also wrinkled up in a few spots, does this mean I should of used a larger stretcher?

Whole picture has a yellow tint but what i see is nothing wrong with the pelt, Every time i see a rat wrinkle up like this one is from drying to close to a heat source. thicker hide means it is older,Now for the grease You did not over flesh IMO it this is a older rat then your other one so you are seeing more grease due to a very thin layer of fat the younger ones dont have (Yet)

saddle 1 to 2 years Maybe thick skin can not see the hair roots with a good thick saddle 2+ years old this is the best i could ever go by for my rats around here but for your it might be a little different but this will still put you in a (ball park age)of the rats.
Some thing you may want to do is check with your local buyer and see if he can show you and help you with some tips
I am very sure someone here will chime in with some more if not better info for you
