Put a slice of jalapeño on each side of the breast. Wrap it all up in 1/2 a slice of applewood bacon. Secure with toothpicks. Grill until the bacon is done. Doves turn out medium, very tasty.

cut the meat out on the doves chest. Then you rinse it off and get all the crap off. Then you wrap it in bacon with a tooth pick in the middle. Next you grill it till you think they are done. Then enjoy:) With the grilling on the grill we all like it different so make them how ever you want.

I've done the jalapeno bacon grilled doves...AWESOME! Also love em dusted with flour, fried and tossed in wing sauce. Another good one is to brown them and add to a mushroom cream sauce. Pour over pasta for dove stroganoff.

Our favorite and easiest ive found. 1 dove breast, wrap in one layer of bacon and toothpick in pmace. Low-medium hear on the grill. Turn constantly. When the bacons done/crisp the dove is. Spritz of worchestershire or dot as they come off the grill. You can salt n pepper the breast before wrapping too but i dont often. You can also debone it after the grill and finely chop along with the bacon, real mayo or miracle whip added just enough to make it stick together, little mustard or hot mustard then mixed in for zip n color, sliced tomatoes and baggette bread with this "dip" is awesome, little heeded lettuce makes a BLT that is outta this world.

Wow missed this one.. all recipes look great
I did not read all with full attn so mine might duplicate
First crisp bacon up in fry pan and allow grease to drain on paper towel.. then crumble bacon
Dice up some chives
Mix the above 2 with sour cream
Core jalepanos and using a cake frosting tube or similar stuff jalepeno.
Stuff jalepeno into dove breast and wrap with a thick cut hickory maple bacon
I grill mine but they work well in oven also
DO NOT OVER COOK when bacon is done I pull mine from heat
This mix works well with whatever you may want to season with
We use Salt Pepper Garlic Hugarian paprika Cumin

Boy, they all sound good. Yet another thing we can't do here in NY, no dove season, though we're working on it. That's not to say I didn't eat more than a few of them when I was a kid. They're tasty birds. If the dove legislation passes, I'll be giving those recipes a try, thanks.
