I have my Grandpa's old shefield fleshing knife and it has nicks in it, I was wondering how you sharpen them, I didn't know if you can get them too sharp or is there a certian way? any info is appreciated Jamz

Cant get a knife too sharp.
As far as sharpening, you can sharpen them on a stone if the edge isnt in good shape. Do NOT sharpen both sides of the blade like a knife, just the angled side. If the edge is just a tad dull, I take the spine of a knife(the flat back) and run it along the edge of the blade till it feels sharp.
After you do either of those, make sure you take the burr that forms on the flat side of the edge off.
