Hey Nathan, skunks love Chicken flavored cat food a lot, sardines work great.
If your going to trap skunks out of an area,First before you set steel, set a live trap, that way you can re~locate the cats, cause I swear to ya,if you put sardines out as bait, cats will be there first!!
Then set steel traps with a dirt hole set, trap up tight to the hole, and bait with sardines in one set and chicken flavored cat food in another set.Larry Gene Pate

Seems to me that you can catch skunks with pretty much anything. My favorite skunk bait for ADC work is wet cat food. Fish flavored. Sardines work well too.
Last fall I had a batch of cultured eggs ready and I added some Asafoetida powder to it. I gave it a try in my back yard and caught five skunks in five nights. I'm going to be trying it when the mating season starts and the calls start coming in.

rotten down eggs with some asafoetida ,banana oil or blue cheese will constantly produce skunks. asafoetida is one stout ingredent but it's one that will not kill the formula as long as it's used for skunks and they love it.

I'm not a lure or bait formulator but I use the cheese flavored popcorn in cage traps.

basically anything you would trap a coon with, skunk will come too. i catch skunk in ALL my sets. using ANY lure. stick to your fruit based lures or fishy lures and you will do fine. Bill has some good advice with the eggs too.

I am also a user of the cheese flavored popcorn...took 12 from one feed lot last year that way. With that said got some eggs that have been "curing" for a year or so, getting ready to add something...reckon I will try bills advice with the blue cheese as that is what I have on hand. Tom

When I trap skunks I usually make something up real quick that would have a nice odor
